20 Best Chocolate For Candy Making (2023 Updated)

If I could give these 0 stars I would. These were absolutely terrible. The chocolate did not stay runny enough for me to continue dipping. After a few times of having to melt it again the consistency was basically unusable.

The only reason I bought it was because the store was out of my normal brand so I thought Ghirardelli should be a better product. Boy was I wrong! Ended up having to go to multiple stores to find my old brand, and had zero issues.

Will never use these again.

I know when I use Ghirardelli wafers in making chocolate treats that they will be smooth and will not have that “cheap” wax taste and consistency. They are so reliable! High quality as well. Yes, they are more expensive than the colored melts from other companies but the difference is miles apart.

These wafers have excellent taste, high quality finish and color. They melt evenly and easily. They were delicious in a cookie recipe for truffles this Christmas and made them look professional. Would definitely recommend them!.

Purchased this for the first time and I am in love! This chocolate is perfect out of the bag. I have always used chocolate chips or Candiquick and melted for covering pretzles, and making other candy, but they all fail in comparison to this chocolate.

These wafers are extremely smooth and taste amazing. I am now inspired to make plain milk chocolate candies just because these wafers stand alone on their own and do not need another star to make them worth eating.

My children who always sneak into my bags of chocolate chips have been searching for these since the tasted them. This is all I will buy from now on and I am so excited to see how they fit into my recipes.

Absolutely delicious! Trying these for the first time. Great when melting in a cup of coffee. Looking forward to trying other ways mentioned on the package. Hard to believe that thirteen wafers are one serving.

And better yet, that those thirteen wafers are only 160 calories!!! Do keep in a cool dry place as recommend. Definitely, melt in my mouth DELICIOUS!.

Just want to clear up a few misconceptions: 1. One reviewer complained that “it’s not chocolate”: The only one to blame here is Target – Ghirardelli does not even call this product “chocolate”, they call it “Melting Wafers”! The reason is that to melt (real) chocolate and make sure it’s solid and shiny again at room temperature after cooling, it needs to be tempered, which can be a very fickle and time-consuming process.

Do a Google search for “Tempering Chocolate”. The Palm Oil in these wafers does not need to be tempered, it just solidifies when cooled to room temperature without hassle. If you store your covered strawberries in the fridge, you can use real chocolate (just get a bag of choc chips) and carefully melt it in the microwave at 50% power.

It will be solid in the fridge even without tempering. 2. Another reviewer complained that the product was melted on arrival: This is no big deal, you’ll melt the wafers anyway! Just put the bag in the fridge, it will be a big clump that can then be melted (carefully!) following the instructions.

Maybe be even more careful with the power level and melt at 30-40%. Bottom line: For what it is (candy coating, NOT chocolate), this is an excellent product. If you make chocolate covered strawberries, you can use real chocolate and store them in the fridge.

For truffles and nut clusters, you’ll have to temper the chocolate to make it solid and shiny at room temperature.

I have been using Ghirardelli melting chocolate for at least 15 years. It started as a big block and change to wafers. It is so easy to melt and taste so good. We use it for Christmas goodies and one year could not find it.

We tried just using chocolate chips and many of our family and friends noticed a difference. This is the best flavor of all!!.

I buy these to dip my cookies but my husband usually gets into them and munches on them before I get a chance to bake. I’ve made Non-Pareils by placing them on a cookie sheet lined with parchment paper and placed in a barely warm oven for a few minutes then sprinkle them with Nuts.

com’s non-parents all over them. I place them in the refrigerator to cool where afterwards I store them in an air-tight container. They don’t last long as they are one of my husband’s favorites.

I purchased these last year and enjoyed them, so I bought them again when they came back into stock last month. Unfortunately, Ghirardelli changed their ingredients to now include hydrogenated oils. Why is this important? Because Sam’s Club doesn’t include the ingredients list on their website, so there was no way to tell that Ghirardelli changed their formulation.

Unfortunately, this ingredient change does affect the taste of the product. Plus, hydrogenated oils aren’t the healthiest (as they are high in saturated fat) and should be avoided. I would not have purchased them had I known about the change in ingredients.

Ghirardelli’s choc chip (morsel) containing the same amt. of cocoa (60%) & do NOT contain hydrogenated oils (as this is not a trans fat, it still is artery clogging). I will not purchase again, but will buy their choc chips.

So I assume the hyd. oil helps the wafers melt quicker? That can be the only reason why any company would do this to their customers.

My kids (8 & 9) received science kits for Christmas. We loved learning about Chocolate and making our own. The only problem we ran into was the temperature sticker didn’t work. Regardless, the chocolate was still fine.

One thing I really enjoyed about this kit is that it wasn’t just a recipe. It told the history of chocolate making and helped us all better understand what the process is to that goes into making chocolate.

Another of our continuing school-at-home during coronavirus activities. This was a little less science-y that some of the others from HST, but it was a hit. My kids, ages 9 & 11, did the activities on their own – instructions were clear.

The only tricky part was getting the mixture to the right temperature for tempering. It took the kids several attempts (ie, heat-stir-wait, heat-stir-wait); from a video we had seen perviously (not form HST), they knew that tempering was essential for texture and appearance.

It was nice to have the cacao beans in the set, even though they were not part of the activity. We all tasted them, and it led to a good conversation about the long path to chocolate. The end chocolates were really yummy.

We didn’t add in anything extra (no vanilla, no nuts, etc). From beginning to end, the activity took a little over an hour (apart from cooling). Waiting to get to the right temperature took about half that.

Amazing gift for friends interested in both science and the culinary arts. Small, but comes jam packed with the materials needed to make authentic chocolate at home. Cute packaging and useful for multiple age groups.

this is by far my favorite chocolate to use! I bought it to make chocolate covered strawberries and the consistency of the chocolate was perfect. it was very easy to work with and the flavor was just fenominal.

unfortunalty I havent been able to find it at wal mart anymore and it was my favorite. I highly recommend this product.

Product is really good for the price you pay. I didn’t warm up the chocolate in the tray provided. I actually broke the chocolate and melted it in a small pot over the stove. Do not overheat, it will dry it out.

Also, dip your products into the chocolate before it starts to thicken for best results. If your chocolate gets thick, add another piece of chocolate and microwave it for a bit. (Or over the stove) Wisp your chocolate until it’s soft/creamy again.

Another tip: I do not melt all of the chocolate at once being that it starts to thicken within time. Overall, good product. I would buy it again.

This chocolate coats beautifully and easily. Usually doesn’t need to be thinned with oil. It is my favorite for cake pops. However the flavor is not the best compared to other brands. Still would recommend.

You get a large quantity for a low price.

I usually purchase the “Great Value” brand and have 0 issues, but the store was out so I figured I would give this brand a try. Every single piece had bloomed (gotten that chalky, white look). Very disspointed, especially since this brand is more expensive than the Great Value brand.

I would go without if this brand was my only option.

If you order these you must pay extra for the temperature controlled delivery. I didn’t and these arrived mostly melted into a giant lump with a white bloom on most of the chocolate. Complete waste of money.

Beware. Pay for a temperature controlled delivery. Btw, I ordered milk and dark chocolate apeels and both arrived in the same condition. $26 wasted.

I absolutely love this chocolate not only was the taste amazing but the way it melted was fantastic. I was able to make chocolate bombs and covered treats without a problem. The package I received in was in great condition and package well! Thank you for this delicious chocolate!.

I used these in candy molds for the shell of my truffles. The ingredients are outstanding, the flavor rich and creamy, but the texture has a nice snap when you bite into them. These dropped out of the molds with no effort.

I will purchase these again.

I primarily use C70-30-38 for flavoring where I can take full advantage of the rich smooth taste and have the freedom to adjust sweetness manually if needed. Nice hard block with scalllopping chipping.

Combines beautifully with flavors of tonka, vanilla, rum, coffee.

Okay so I have two different perspectives, me and my mother and they are completely different hence 3 stars. I actually do not mind this. I wouldn’t say it’s the best ever, but I do enjoy it on occasion.

It’s a bit too intense for me to eat it all in one setting though. My mother on the other hand, hated this with a passion. Her words were that it tasted like eating perfume laced chocolate. Which I can kind of understand because the orange taste really can be a bit biting and the dark chocolate gives it a bitterness that reminds me more of zest rather than orange.

But again, I don’t mind that taste all that much but just thought I’d make a note of it. For the price I’d say it’s worth a try if you’re curious which is why I bought it in the first place. I do like to cut it by eating it with some Hawaiian sweet rolls.

For some reason it mind of makes the chocolate a bit milder.

This is the dark chocolate bar I kept going to while trying the keto diet. The flavor is beautiful. It is fruity and less bitter than most other high cacao content bars. The chili spice brings out the sweetness, and a small serving is just enough to satisfy those late night sweet cravings.

It is a premium brand chocolate and priced accordingly. It is smoother than others and worth the price if you can find it on sale. It is usually available at my local supermarket for under $3. I buy it as a special treat and recommend it for others wanting to try something new or needing a diet specific dessert item.

I absolutely love Lindt Excellence 95% cocoa dark chocolate. For me, the darker the better and this is perfection to me. A huge reason is chocolate is an antioxidant and the darker you go, the less sugar.

While I usually eat the bar, I have found this particular blend great over a sweet potato, stuffed with cinnamon sunflower cream cheese (no dairy) and drizzle the dark chocolate over it. It’s honestly weirdly like a canoli and good for you.

I’ll review the sunflower cinnamon cream cheese on another post. Wherever you decide to indulge in this delight, know that even tho you are indulging it’s a good indulgence!.

These little sweet chocolates are amazing! They are so easy to use, and melt beautifully. I enjoy using them for chocolate dipped strawberries or frozen bananas, and I always get some white ones, add food dye, and make them match the occasions.

I also find myself just eating them to satisfy the sweet tooth. I have used my other kinds, but find that they don’t melt right, burn to eazy or just don’t cool right. They make the holidays eazy and the just because deserts delightful.

I normally get the brand candy melts for my little melting crockpot around the holidays, but I was in Michaels and these were on sale at a great price so i figured I would pick them up. When I say the difference was astounding! The crunch that gourmet chocolate covered strawberries have was finally achieved with these melts.

After you dipped your desired item, the dry time was almost instantaneous, but the chocolate did not stick to the sides of my pot while it was melting. Genius! I will 100% be buying these again. My coworkers all ate the entire bag full at the work Christmas party.

These were really good. I just ate them like candy, but by the way they were melting in my hand (it is summer here and hot!) I can say that I know they would melt smoothly if that’s want them for. I was skeptical because I usually like caramel without the salt, but it worked well in these.

I loved that there was actually sea salt chunks in them (really small and almost unnoticeable), but it gave them a good texture. They are addicting and I finished off the bag way faster than I want to admit.

YUM! I have always lipped Lindt chocolate for a little self indulgent treat from time to time and always enjoy the rich chocolate taste. I was excited to then come across this crispy milk chocolate bar, as I’ve never tried it before and the packaging screams: eat me! So I just had to try it! It is so delicious! So delicious in fact, that I ate it in its entirety, in one short sitting! It’s so tasty, smooth flavoured and the crispy bits are a lovely addition! Will be buying some more for sure! Ok first bite was the winner for me. I tried other chocolates from this brand but not this one. Wow every bite but just gets better then the last. I’ve tried many chocolate brand’s but by far with is a winner.

No other bar has the nuts like these. Basically every piece is full of nuts I love it!! The chocolate just melts into the mouth yum yum. I’ve hidden it away from my kid’s as I’m just not sharing!! For anyone that likes a nutty chocolate, look no further as this is the one for you.
