OK so it might seem a little pricey BUT I promise you they are so so very worth it. Just a home cook nothing super fancy but it is so much quicker to cut up veggies especially the hardier veggies like sweet potato and beetroot.

Fantastic knives if you get them like I did for half price in the midyear Myer sales, however for the original price I would defiantly consider hand made Japanese knives. Wusthof are well balanced, light and sharp and being German steel easy to sharpen, the timber handles look and feel great.
I gave these 4 stars because I find the blade to light, when I’m cutting into larger veggies just seems lacking although I’m sure I would have a different opinion if my job involved holding them all day.
After going to Solingen Germany several years ago I was able to visit the Wusthof knife factory. I bought several back with me and I just love using them especially the Santoku knife. I’ve decided to buy my daughters and daughter in laws one as well.
They are worth every dollar. I’m so happy with mine and my daughter in law loves this new crafter style which has a wooden handle.

Rada Cutlery knives are an excellent buy. These are plain-Jane, no nonsense, kick butt in the kitchen, knives. And they may not be quite as “pretty” as some of the very expensive knives, but as far as function, I would put these up against knives costing three or more times as much, easily.
Don’t really know what else to say, except, look at the overwhelming majority of favorable reviews. They aren’t there for nothing. I seriously doubt that you could find better knives, made in the USA, at this price.

First of all, I have been sharpening knives for several decades. I can usually go from dead dull to a razor’s edge in 15 minutes or so. But, THIS knife will not take an edge, for love or money. I spent several hours fighting with it, but the edge just crumbles.
If this is 1095 steel, then Old Hickory’s heat treatment process is WAAAAYYYY off. I was excited about getting it, based upon glowing reviews of others. I liked the idea of going back to carbon steel for its superior edge, over stainless knives in this price range.
But this knife bears no resemblance to the carbon steel knives of my youth. It will not take an edge. It’s a nice-LOOKING edge, but the microscopic apex crumbles on the stone. There is no burr. It breaks off.
It’s like they burned all the carbon out of it. It’s dead steel. A friend who used to run a tempering furnace in a spring shop suggested that maybe they’d tempered it too many times. Maybe it was just junk steel to begin with.
In any case, it’s useless as a carving knife. Maybe it would be good for a movie prop. there’s definitely no chance of anyone accidentally cutting themselves with it. It’s very disapointing to see the quality control of an old American company go so far downhill.
They should be ashamed. Old Hickory is bound for the ash bin of history.
Great knife. It keeps a very sharp edge for a long time. The stainless steel makes it easy to keep clean. The wooden handle feels great in your hand, but can be slippery and hard to hold when wet. A very well balanced and made knife that will last a long time.
These truly are great knives. I now own the 4, 6, 8 and 10″ knives in the Old Hickory collection. I LOVE the they are carbon steel and not SS. They are sharp from the start and are very easy to sharpen with a decent sharpener.
Use it, clean it, I then wipe quickly with some grape seed oil and put it away for the next use.

Well balanced small paring knife and very sharp. Surprisingly almost too sharp when stringing beans as it unintentionally cuts right through the bean tip with little resistance. I like the stiffness off the blade which is mainly why I bought it.
I have a similar size Japanese knife (different brand) with a much more flexible blade and these two compliment each other well for different uses. Highly recommended.

My dad loved to hunt, and always used a carbon steel knife to fabricate, said it was sharpest and easiest to maintain. The Bob Kramer Euroline Carbon Steel is made with 52100 Carbon Steel and definitely meets and exceeds expectations.

This knife is the perfect addition to my collection and would definitely win my dads approval.
I needed something between my 3″ paring knife and my 8″ chefs knife. I would have purchased a 6″ chefs knife but they seem to be out of stock everywhere. I can’t tell if the 6″ chefs knife is even still being manufactured.
So I settled on this 5 inch “utility” knife. To me a utility knife goes in the tool box in the garage. And I’m pretty sure this knife is NOT intended to land in any tool box. This is basically a paring knife with a longer blade.
The factory edge is what a person would expect from a Kramer branded knife – shaving sharp! The blade profile turned out to be perfect for the cutting I do to prepare breakfast and lunch for my kid.
I’m super pleased with this tool. I did put this on my Naniwa Pro water-stones and followed up with a little TLC on three strops just to see what would happen. As expected the high-carbon steel took a surgical grade edge.
Whew! So while I will still probably pick up a 6″ chefs knife just to have a taller blade with that beautiful rocking belly, I am just tickled to have this 5″ utility knife for daily use in my kitchen! Can I give it six stars?.
Really not a bad knife, it’s just a terrible value. The fit and finish is quite good, and the carbon blade is reactive but not absurdly rust-prone, even if you don’t dry it as quickly as you should. It will take a scary-sharp edge with competency and decent sharpening stones.
Disclaimer: I have a preference for thinner knives. I want my knife like a laser beam; if you like thicker knives, or are used to “normal” knives from the likes of Zwilling or Wusthof, this thing will make those look second rate and will be a nice step-up.
Pros: The way this grip fits in the hand is pure art. The profile of the handle and balance are immaculate if you’re used to a traditional, European style handle. The fit of the components is standard+, but the polishing is second to none – really amazing attention there.
My issue is a couple of things: the knife is VERY thick; ingredients wedge and it does not move as nimbly through ingredients as its sharpness would lead you to believe. Out of the box sharpness is maybe 4.
5/10, spend a bit of time with some stones and this gets freakishly sharp. Also, this knife feels larger than it is, it feels bulky and clumsy for an 8″ blade. Would I recommend? IF you like thick knives this is probably one of the best on the market in terms of profile, bolster-less design, fit and finish, but it will be higher maintenance than most knives in that category – and you’re going to pay a hefty premium for this.
If you want something that will be nimble, fly through ingredients, and is much better value (and less maintenance) get a stainless-clad carbon Japanese knife from a boutique producer. You will get much better value for money, and a much higher performing knife.

I wasn’t happy with the delay in shipping from the Hong Kong warehouse. I suppose it was outwith their control. Knife arrived with a canvas sheath and well greased. Washed it and wiped it dry. Cut my finger when running the kitchen towel along its cutting edge.
A really sharp knife. The non rectangular shape looked strange but it worked well. It has good weight and sharp edge for cutting right through spare ribs cleanly. We love this cleaver. Our next challenge will come when we have to sharpen it.
This knife is one of the most beautiful carbon-steels I’ve come across. Its patina looks stunning against the steel, and gives it a professional finishing look. The weight of this knife is very well balanced between the blade and the handle.
It is on the heavier side of things, but that is often what you are looking for in these types of knives. The blade itself is very sharp, though due to shipment I would recommend polishing it with a 5/6000 grit whetstone (if you have one of course).
It is easy to sharpen and maintain and the knife comes with a sheath to ensure it isn’t damaged wherever you store it. The sheath is very good in terms of quality and how it fits the blade. The handle appears to be of very durable nature, and the dark colour of it gives it a great and appeasing look.
It fits well in the hand and feels right in terms of size and weight. Overall this knife is a very fine addition to anyone’s collection if they are willing to care for it (like any other carbon steel knife).
And whilst it took a while to arrive because of COVID-19 (Which is very reasonable and understandable), I think I can expect to see this knife staying with me for years to come. 10/10.
Perhaps a little too sharp ? kind of brutal too , not in the bad way , but having been used to your regular “heavy duty” knives for so long, and suddenly get a real heavy duty knife in your hand. should have a handle with care sign on it, its is a bit too serious for most people and women i would think.
But , finally, a good piece of kit, Oh, and looks good too. (Also, the pouch ? (is that the name for it? ) was a little damaged , and emailed them with pictures, they have sent on back in about a week.
PS, not give feedbacks lightly , and generally not a 5 star , onle here its a different story, finally something good. Worth a try.

I have a much older model with a wooden handle. It is as sharp today as the day I purchased it. I wipe it with a soapy sponge to clean it when finished and put back in the plastic sheath it came in 20 + years ago and it’s good to go for the next loaf of bread or rolls! When I purchased this knife I believe it was somewhere around $10-15 which was pretty expensive even then :).
It still is worth every penny they charge today, I just wish they still had the wooden handle! Good thing mine will out last me and the next generation.
