20 Best Dark Chocolate For Melting (2023 Updated)

I’ve ordered from S&C a few times now and I am very pleased with the company. They have become my go to for the Merckens chocolate. Shipping is expensive but they get the product out to you fast. I’ve ordered the chocolate from Amazon and others in the past, got free shipping but it took forever to receive.

Also I need a large quantity of the chocolate and I can not get my desired size anywhere else but S&C Merckens in general is the ONLY brand of melting chocolate I will use for my HCB, fruit fillings , ganache, anything that requires melted chocolate gets this.

The taste is great and they melt beautifully.

My wife & her daughter have used these melting wafers for Christmas baking for 20 plus years, packaged as celebakes. This year, as every other year, they bought approximately 60 dollars worth of melting wafers, vanilla & milk chocolate.

All of the milk chocolate crystalized almost immediately. After several attempts at melting the wafers, both on very low microwave setting, & using a double boiler, to no avail. Had to use another product.

Now out 60 bucks & will NEVER use this terrible product ever again, nor will recommend this to any of my fellow bakers. BEWARE, these melting wafers are complete garbage, & I will make sure when buying melting wafers in the future, that merckens has no process in the making, whatsoever.

We live in Florida and this October it is very hot. My 20 lb order of Merckens Milk Chocolate Wafers was delivered to my doorstep in excellent condition with not even one wafer melted. The product was packed with cold packs inserted within the box protecting it from the high heat of Florida.

Stover packaged the best of any other company we purchased from and the pricing was very competitive. We will most certainly be back for more chocolate and other products!.

I love these fkr making chocolate covered strawberries or fudge. Almost anything you want to make with chocolate is going to be better with this brand. It’s a richer and deeper chocolate flavor. I’ve found after experimenting that it’s one of my favorites.

These melt down so easily and dry quickly. They taste like real chocolate too! I’m a chocolate snob and hate when this type of melting chocolate end up tasting like shortening. This is the best I’ve tried! I have been keeping them in stock because my husband and little boy love chocolate covered bananas and strawberries.

Its fun to make with a little too. Perfect family treat.

Absolutely the best for using in recipes. It melts perfectly for dipping fruits and in baking needs. The taste is so much better than others on the market. Definitely I can tell the taste difference when using a different product.

I have come to the conclusion that this is the best on the market and will look to only buy this brand.

I don’t really discriminate against chocolate; it’s all good, in one context or another. White, milk, semisweet, bittersweet, dark, unsweetened. all delicious. But when it comes to pure dark chocolate, I don’t bother with anything under 85% cacao, and usually prefer 90% or higher.

At this point, actually, I don’t bother with much else besides Alter Eco super blackout. This is absolutely my favorite dark chocolate. It’s SO smooth, with a soft, creamy texture almost reminiscent of ganache as it melts, yet it’s also delightfully chewable.

The flavor is deep and well-rounded, slightly fruity without an overwhelming tang, with a complimentary sweetness. Very, very good. I’m especially crazy about the texture; I’ve yet to encounter another brand as beautifully smooth as this one.

Heartily recommended! I hope Vitacost will stock Alter Eco’s 100% total blackout, eventually. I’d love to try that one by itself.

Ever since I first had Alter Eco chocolate, it’s been my favorite chocolate. The taste is great (though for some it might be a bit salty), really well balanced for a dark chocolate. It’s bitter but not overwhelming.

It’s smooth, and the thickness exactly right to get a Snap so that you’re not getting overwhelmed with too large and rich a bite. I’m totally a chocoholic, and I found Alter Eco when I was looking to get ethically sourced chocolate to have around the house.

Their commitment to ensuring that the workers are treated fairly is great, and I *love* that they also have the goal of diversifying cocoa fields. The price isn’t bad for an ethical chocolate either! It got harder to find Alter Eco in stores, so I’m thrilled to have the option to buy a box (and even get one regularly delivered!).

I loved it! The design seems to be to put all the mint flavor in these little peppermint crystals, but it spreads out very nicely throughout the chocolate. Really delicious, and the darkest mint chocolate bar I’ve ever found.

And I really appreciate the restorative agriculture. However, I am disappointed in the labeling – it says “90% cacao”, but that’s clearly not the case. The nutrition information says 12g of sugar in a 75g bar, so that’s 16% sugar – at best this could be an 84% cacao bar.

Still better than anything else I can find, but why the misleading label? Clearly they’re pretending they don’t have to count the mint crystals.

Amazing! I love this brand of melting chocolate! The price is amazing for such moist, rich, and creamy chocolate. I use this exact chocolate for my small business. It’s great for dipping strawberries, cake pops, Oreos, Rice Krispies, or for making chocolate hearts.

It cools quickly as well! I would for sure buy again no doubt 10/10.

These packets are really great and flavorful. I have tried other melting candy wafers and it didn’t have enough flavor or it burnt very fast. These didn’t burn too easy and if well mixed wouldn’t dry super fast.

It worked really well when I made dipped strawberries and dipped pretzel rods.

Best chocolate!!!! I use this for baking, and covering anything and everything I can with chocolate. Super easy to melt and it taste AMAZING!!! White Chocolate is the best but dark chocolate is good as well.

Purchased this for the first time and I am in love! This chocolate is perfect out of the bag. I have always used chocolate chips or Candiquick and melted for covering pretzles, and making other candy, but they all fail in comparison to this chocolate.

These wafers are extremely smooth and taste amazing. I am now inspired to make plain milk chocolate candies just because these wafers stand alone on their own and do not need another star to make them worth eating.

My children who always sneak into my bags of chocolate chips have been searching for these since the tasted them. This is all I will buy from now on and I am so excited to see how they fit into my recipes.

Just want to clear up a few misconceptions: 1. One reviewer complained that “it’s not chocolate”: The only one to blame here is Target – Ghirardelli does not even call this product “chocolate”, they call it “Melting Wafers”! The reason is that to melt (real) chocolate and make sure it’s solid and shiny again at room temperature after cooling, it needs to be tempered, which can be a very fickle and time-consuming process.

Do a Google search for “Tempering Chocolate”. The Palm Oil in these wafers does not need to be tempered, it just solidifies when cooled to room temperature without hassle. If you store your covered strawberries in the fridge, you can use real chocolate (just get a bag of choc chips) and carefully melt it in the microwave at 50% power.

It will be solid in the fridge even without tempering. 2. Another reviewer complained that the product was melted on arrival: This is no big deal, you’ll melt the wafers anyway! Just put the bag in the fridge, it will be a big clump that can then be melted (carefully!) following the instructions.

Maybe be even more careful with the power level and melt at 30-40%. Bottom line: For what it is (candy coating, NOT chocolate), this is an excellent product. If you make chocolate covered strawberries, you can use real chocolate and store them in the fridge.

For truffles and nut clusters, you’ll have to temper the chocolate to make it solid and shiny at room temperature.

I have been using Ghirardelli melting chocolate for at least 15 years. It started as a big block and change to wafers. It is so easy to melt and taste so good. We use it for Christmas goodies and one year could not find it.

We tried just using chocolate chips and many of our family and friends noticed a difference. This is the best flavor of all!!.

It is SO HARD to find chocolate that I can have. These fit into my repertoire of foods perfectly. I purchase in sets of 4, so they will be able to last through the Winter months. When you spend hours shoveling, you MUST REPLACE your electrolytes and sugars.

I eat one of these and drink some Emergen-C, and feel better right away. I have borderline Amemia, and strong Hypoglycemia, so I NEED to be careful. These bars are safe for me in both sugar content and the ingredients used.

Wish they had MORE choices in the Milk variety, as I CAN’T have Dark Chocolate-BUT, at least I have these!.

By far the best tasting chocolate. I’ve had most of the expensive gourmet chocolates, most recently Vosges (unimpressive) but I no longer eat any kinds of sweeteners so only eat pure chocolate and make my own treats.

I have tried Baker’s, Ghirardelli, Guittard and Scharffen Berger side by side and there is no comparison. Every other brand leaves my mouth dry and is difficult to eat plain. I need to drink lots of water or cream to chew and swallow.

Baker’s has a perfume taste, is chalky/dry and bitter. Ghirardelli is bitter and chalky/dry but better than Baker’s and Guittard is very sour and chalky/dry. Scharffen Berger is a whole different world, it is delicious, ultra smooth and creamy, not bitter and not chalky and mouth drying like the others.

It has a rich, round robust chocolate flavor and is so smooth and delicious, its so good it can be eaten plain. Target has the best price.

Best unsweetened chocolate ever, perfect for my very especial hot chocolate, which is thick and delicious. If someone is curious to know, my ingredients are this excellent chocolate, whole milk and evaporated milk, at very low temperature till it gets thick but drinkable thick.

Sugar added by each person, how sweet it is must be is a personal matter.

This is one of the very best chocolates, for both baking and eating. Making a chocolate cake or adding it in cookies is delicious, and guests could taste the quality of the chocolate. The chocolate is intense and smooth, and it has distinctive notes that are great for serving with wine and cheese as well.

Making hot cocoa out of this 70% cacao is a special treat.

I primarily use C70-30-38 for flavoring where I can take full advantage of the rich smooth taste and have the freedom to adjust sweetness manually if needed. Nice hard block with scalllopping chipping.

Combines beautifully with flavors of tonka, vanilla, rum, coffee.

Callebaut chocolate is recognized throughout Europe as one of the highest quality products of the Belgium industry. The cocoa content is high, the texture is extremely smooth, and the ease of incorporating the product into recipes goes without mention.

My guests quickly identify the desserts made with Callebaut as superior to other chocolates. When I expect accolades I use their product but when I want to save a few dollars I use something else–usually a mistake.

Okay so I have two different perspectives, me and my mother and they are completely different hence 3 stars. I actually do not mind this. I wouldn’t say it’s the best ever, but I do enjoy it on occasion.

It’s a bit too intense for me to eat it all in one setting though. My mother on the other hand, hated this with a passion. Her words were that it tasted like eating perfume laced chocolate. Which I can kind of understand because the orange taste really can be a bit biting and the dark chocolate gives it a bitterness that reminds me more of zest rather than orange.

But again, I don’t mind that taste all that much but just thought I’d make a note of it. For the price I’d say it’s worth a try if you’re curious which is why I bought it in the first place. I do like to cut it by eating it with some Hawaiian sweet rolls.

For some reason it mind of makes the chocolate a bit milder.

This is the dark chocolate bar I kept going to while trying the keto diet. The flavor is beautiful. It is fruity and less bitter than most other high cacao content bars. The chili spice brings out the sweetness, and a small serving is just enough to satisfy those late night sweet cravings.

It is a premium brand chocolate and priced accordingly. It is smoother than others and worth the price if you can find it on sale. It is usually available at my local supermarket for under $3. I buy it as a special treat and recommend it for others wanting to try something new or needing a diet specific dessert item.

I absolutely love Lindt Excellence 95% cocoa dark chocolate. For me, the darker the better and this is perfection to me. A huge reason is chocolate is an antioxidant and the darker you go, the less sugar.

While I usually eat the bar, I have found this particular blend great over a sweet potato, stuffed with cinnamon sunflower cream cheese (no dairy) and drizzle the dark chocolate over it. It’s honestly weirdly like a canoli and good for you.

I’ll review the sunflower cinnamon cream cheese on another post. Wherever you decide to indulge in this delight, know that even tho you are indulging it’s a good indulgence!.

This is a “No sugar added” candy bar. When adding this to my online order at the last minute, I must have overlooked the small print that stated “Stevia Sweetened”. As some people are allergic to sugar substitutes, this statement should be more prominently displayed on the label.

The label also says “Milk Chocolate STYLE”, which is not the same as actually being Milk Chocolate. It tastes a lot closer to Dark Chocolate than Milk Chocolate, and its very hard like Dark Chocolate.

Most confusing is the “Salted Caramel” claim. Doesn’t that make you picture a creamy caramel center? I assure you, there is not a caramel filling inside this candy bar. There is no visible caramel at all; i guess they meant the caramel is mixed in?? I don’t like giving unhappy reviews but i feel like the label needs to be a lot clearer about the product inside.

Especially at this price.

Dark chocolate is a healthy food, but it often comes loaded with refined sugar. Lily’s stevia-sweetened chocolate is a perfect solution. Because the 70% cacao formula is not as sweet as some other varieties, it is best to let it melt in your mouth or take it with a warm drink to bring out the sweetness.

Because I am a chocolate lover, I buy this product in fairly large quantities each month. Lily’s price is much lower than that of the local retail store, especially if purchased with Autoship and LV+ membership.

I really had high expectations for this mascara. I have pretty good length and volume so I can get away with a good water proof mascara that just adds some color. This didn’t just make my length look like nothing, it clumped so badly with this absurd brush that even my eye lash separation couldn’t help.

The one end of the brush is almost 2X larger than the hole and it tapers to nothing. It’s not easy to use. I put my mascara on last, so I had to remove everything from my eyes and redo it all. I may try a different brush but for the price I’d have expected a better application.

It was delivered with a leaked ice pack in the sale bag so it was full fill of gel everywhere. I contacted the company and Norman told me I could make a claim which I did not do because this product is supposedly non toxic.

I was wrong to not claim. The product went through the aluminum chocolate packaging. It is like greasy and not usable to cook with. A pity.

This chocolate makes the best brownies or chocolate cake! Perfect balance of chocolate. Goodies from Mypanier always come quickly and packed carefully. I am so happy I discovered their website!

Bought dark before and again, tried the Belgian, it’s wonderful, immediately reordered. First order came faster than I expected, but second order is taking longer! Used to buy the dark from a local restaurant supply, that went out of business, after decades, just before covid.

It’s easy to prep this very mellow, rich tasting dipping chocolate in its own bag in the microwave. Comes out very smooth at just the right thickness for fondue, fountain or any other dipping or pouring uses.

We love it for our new year’s eve fondue dinner!.

these are so good! dangerously good! if you like dark chocolate, it’s smooth, crunchy, a nice dark flavor without being too bitter. it makes me salivate and crave more after i’ve eaten one. doesn’t have much of an almond flavor, not too salty either.

just a small hint of salt, but not too over powering. could use slightly larger granules or whatever it’s called of salt to get that salty kick, but these are so delicious! so weird they didn’t get as good a review as alter eco on a different web site.

trying that brand too next. my only complaint is, why does it smell like bananas when I open the bag.

I absolutely LOVE Coconut with Chocolate. Mounds were always my favorite, as a kid. When I found this, I was so delighted, because I don’t eat sweets anymore, and this is perfect because it’s the “Real Deal” Unsweetened coconut and a little (perfectly) sweetened cocoa.

Like most Taza chocolate I love this flavor. I prefer dark chocolate and I personally think the 80% dark is just the right balance of bitter and sweet. The stone ground chocolate adds a nice texture; I had to get used to it at first but now I really like it.

It’s good quality chocolate with pure ingredients. I don’t like the minimum quantity because even though I really like the flavor I’d rather mix and match with others on each order.

I’ve been a chocolate lover all my life, and probably eat too much of it! I ate 70% chocolate for many years, but was trying to reduce my sugar intake. (I’ve had 100% dark chocolate from an expensive small shop, and honestly it just tasted like dirt to me!) When I tried this organic, fair trade chocolate, it has the most delicious, complex flavor of any dark chocolate I have ever tried! (I hate those one-note chocolates, where the flavor goes away so fast in your mouth – some of them are pricey too! This flavor has several different notes, and you keep tasting them!) I also only buy organic anymore, and am so happy to find Fair Trade chocolate, where the farmers are well paid, and no slave labor involved! (Yuck so sad we have to do so much research on food these days!) I love the Equal Exchange company – I recommend them for all your coffee and tea needs, though I don’t drink either.

Smooth, rich, satisfying – really great chocolate; I really like all the equal exchange bars but his is totally a favorite. It has enough sweetness for people who don’t like super dark chocolate (like the Eclipse, which I love for the cacao intensity) but it is still great for dark chocolate lovers.

Also, while (most?? All??) big multinational chocolate brands currently try to disguise, fair-wash, or distract from horrible inequities and abuses in their supply chain, it is good to know EE has longstanding relationships with producers and commits to fair trade and ethical products.

So grateful to EE and the farmers!.

These luscious discs arrived in perfect condition all the way across the country. I just used them to make gf brownies and the result was a luscious, rich deep flavor that screams quality chocolate. Can’t wait to use them for a cake.

I buy this chocolate to eat. This solves my chocolate craving with just a few wafers. These wafers have an intense, multidimensional chocolate flavor that is not overly sweet. I have also baked with it and found it to perform beautifully for melting and baking.

Good deep chocolate flavor that starts out bitter and ends with a roasted coffee flavor. Just a little too bitter for me, but my husband is a coffee drinker and he loves it.

This is sooo much better than Candy melts or Wilton’s. The color is better and once it’s melted it’s still very liquidy. Unlike other brands and it gets thick once it’s heated. This brand also doesn’t burn as easily.

Highly recommend.
